Limes belong to citrus family,significantly smaller than Citrus Sinensis-sweet Orange.typically round, lime green, 3–6 centimetres (1.2–2.4) in diameter, and contains acidic juice vesicles. There are several species of citrus trees whose fruits are called limes, including the Key lime (Citrus aurantifolia) which is our case study,other species includes Persian lime, kaffir lime, and desert lime.

In the preparation of snails for meat, Lime juice is used to wash the slippery saliva off snails.this is a best subtitute for alum.the concentrated acid present in lime gives it coagulating property which wipe off its seemingly unwashable saliva.
